Who makes your ice cream? Our ice cream base is made in-house and started off as a variation of nuomi ice cream. Since then, we have been making incremental changes in our continued search for the best taste and texture. Milk, cream, sugar, and milk powder are the main ingredients. For those who cannot consume eggs, our shakes are safe – no eggs added. What’s in the turkey chili? Our chili uses ground turkey, vegetable aromatics (onions, garlic, bell peppers, carrots), plus a variety of dried chile peppers, spices, and herbs to create a complex but balanced flavor. What kind of beef do you use? Local 44 Farms ground beef blend. Where do you get your buns from? We use Sheila Partin’s sweet sourdough buns from Sweet Mesquite Bakery, a local company. They are similar to King’s Hawaiian Rolls in flavor, but have a texture better suited for burgers. What are your special sauces, like the scallion aioli and sambal mayo? The scallion aioli is a garlicky green onion mayo. It has a vibrant flavor profile that some describe as “sharp.” It pairs well with oily and/or strong flavored foods. The sambal mayo is our version of a spicy mayo. It starts off with our house-made sambal paste – a southeast Asian chili pepper condiment. Our version has onions, garlic, ginger, lemongrass, dried chilies, palm sugar, and fermented shrimp paste – therefore, it is not vegan-friendly. Also, it is quite spicy! Although not “special,” our BBQ sauce is made from scratch, too. Our version is sweet and smoky. What type of oil do you use? We cook and fry with canola oil. It is free of trans fats, flavor neutral, and considered better than other vegetable oils. What vegetarian options do you have? Our current vegetarian option is a soy-marinated fried eggplant “patty” that may be subbed for the beef patty in any burger. Our fries and taro chips are vegetarian, too. We also offer a vegetarian chili with all the seasonings that come with the regular chili, but with beans instead of meat (3 beans: kidney, great white northern, and black). You can also order vegetarian chili cheese fries.

It’s official: @dianewfeng and @willetcooks of burger-chan are partnering with @chefryanstewart of Silverlining Hospitality to kick off the next chapter of burger-chan! Ryan’s team will take over day-to-day operations, giving Diane and Willet the chance to focus on a few things they’ve had to put on the back burner—#emojibaby, each other, family, friends, and new projects. As we've grown older, we've realized we can’t do it all ourselves. Partnering with Silverlining will help burger-chan evolve and improve, but our core values stay the same. Even if Diane’s not on the floor and Willet’s not in the kitchen every day, they’ve instilled a deep culture of care, high standards, and the relentless pursuit of being just a little better every day. burger-chan will always be a place of community, great food, and warmth—a place where you feel safe, good, and taken care of. Proud to offer our friends' wine at the chan. We met Ricky and Katie back at Greenway, and we used to see them at least once a week. Then we moved to the Galleria area and they moved to Marfa to make wine. But the relationship we developed in the
Proud to offer our friends' wine at the chan. We met Ricky and Katie back at Greenway, and we used to see them at least once a week. Then we moved to the Galleria area and they moved to Marfa to make wine. But the relationship we developed in the underground stayed strong, and we're always excited for what they've got going on next. We even joined their wine club because they do such rad things. We recently tasted @altamarfa FIRST RODEO with Carlo of @pangeaselections , and it was love at first nose. The smell of muscat and the taste of the wine came together and made me shout YEEHAW! (Orange Muscat is a white grape variety that produces wine with a strong orange aroma and flavors of orange blossoms and apricots.) Come by and grab a bottle to enjoy at the chan, or take it home to enjoy with the clan.
