Wrap Up Why do a pop-up? Fun fact: Willet dreads doing pop-ups. Usually Diane comes up with some idea and ropes him into doing it. This time was no different. Our good friend Carlos was slated to do a pop-up, but it got cancelled. We randomly ran into him at the climbing gym, and Diane mentioned that it'd be fun to do a milk tea pop-up. Carlos said he was down, so Diane asked Willet what he thought would pair well with milk tea. His idea: panfried mantou breakfast sandwiches. Order stats: We had 50 orders for close to 150 mantou sandos and 80 milk and non-milk teas. Sold out of foie gras sandos via pre-order a day before the event. How things went: Most pop-ups are not efficient or optimized despite our best intentions. We don't practice service, we don't time how long it takes to make a product, and we usually are testing out new kitchens and recipes for the first time. We shoot to get orders out in a timely manner, but often times wait times are longer than we'd like. For that we apologize. We know it sucks to wait for food that was due at a certain time. Especially if you have a kiddo in the car or other places to be by a certain time. After a pop-up, Willet immediately starts reflecting on how he would do things better the next time (don't get too excited--Willet rarely likes to repeat a pop-up...and remember, he dreads doing pop-ups to begin with). Our hope is everyone enjoyed the food and beverages that we provided. When's the next pop-up? After Willet does a pop-up, he swears off pop-ups for a while. But he does have a couple ideas in his head based off others' requests and suggestions. So curry laksa noodle soup and a twist on Japanese egg salad sandos are maybes. Stay tuned! I was going to use 3 eggs – chicken eggs, ikura, and mentaiko, but the flavors didn't complement each other. I also attempted several other sandos like crawfish and egg, or corn and truffle. After several trial-and-error sessions, I found that having texture or something slightly refreshing would go a long way. So I went with my gut and stuck to my original memory of tamago sandos in Japan. Willet is a classically trained chef with a penchant for Japanese, Southeast Asian, and Chinese cuisine. Chef Willet took over a second-generation burger spot in an underground food court and put his own spin on an American classic. He drew on what he liked to eat and his culinary training to make the burger spot a place he'd like to eat at. And his goal was satisfy the tastebuds of anyone who stepped up to the counter. So he crafted the checklist-style menu to allow people to create a unique burger based on their own preferences. He also created a few burger combinations like the Texan, mushroom swiss, bbq, and Spicy!!! for those who preferred a more curated experience. What we love about the "Alison Cook burger" is that Alison started off with a classic American burger with the cheddar and sauteed onions, and then she added the kimchi relish and sambal mayo to give her creation an Asian twist. PREVIOUS ABC DINNERS The inaugural Anti Burger Club dinner took place on Monday, April 4, 2022. The second ABC dinner was for takeout and delivery only on Wednesday, May 25, 2022, and Thursday, May 26, 2022, from 5:00pm until 7:30pm. The third ABC dinner took place on Wednesday, June 15, 2022, and Thursday, June 16, 2022, from 5:00pm until 7:30pm. The fourth ABC dinner was a wine dinner in collaboration with Alta Marfa Winery. The wine dinner was on Saturday, October 22, 2022. The fifth ABC dinner on Monday, June 5, 2023, was a collaboration with Chef Gabriel Medina. They highlighted the influence of Chinese cuisine on Filipino food. The sixth ABC dinner on Monday, July 10, 2023, was a collaboration with Chef Suu Khin. They presented a multi-course Southeast Asian tasting menu. The seventh ABC dinner on Wednesday, August, 16, 2023, was a collaboration with Chef Niki Vongthong of Hidden Omakase. They presented a multi-course tasting menu featuring the flavors of Japan and Southeast Asia. The eighth ABC dinner was the first ABC dinner to took place outside of burger-chan. This dinner was a collaboration with Sherman Yeung, the chef-owner of Money Cat, so it took place at his restaurant on Sunday, September 24, 2023, from 5pm until 10pm. They’ll presented their takes on traditional Cantonese dishes. The ninth ABC dinner was a collaboration with Chef Nick Wong to present a Hong Kong Style Tea restaurant experience on Monday, November 13, 2023, from 5:30pm until 8:30pm. This dinner was available for dine-in and takeout, but no pre-orders or reservations were available. The tenth ABC dinner was a collaboration with Pastry Chef Stephen Perez to present an Italian dinner with Japanese touches—also known as itameshi—on Monday, March 25, 2024, from 5:00pm until 8:00pm. This dinner was available for dine-in and takeout, but no pre-orders or reservations were available. Unless otherwise stated, ABC dinners took place at burger-chan.
